Thibaut Clerget, winemaker from Domaine Yvon Clerget is considered today as an undeniable talent of Volnay. Its wines reflect with elegance and brilliance the grandeur of the fabulous terroirs held by this historic estate since 1268. The 6 hectares of the estate located between Meursault in Vougeot, Pommard and especially Volnay have been passed down from father to son for 28 generations. In 2009, Yvon Clerget, Thibaud’s father retired.
For 6 years, the grapes from the family vines are sold to Domaine Henri Boillot, the time that Thibaud finishes his studies and then trains, in particular during an internship still at Domaine Henri Boillot but also at Domaine Hudelot-Noëllat, in Chambolle-Musigny. It was in 2015 that Thibaud embarked on the deep end and produced his first vintage. Thibaud manages the six hectares of the estate thanks to high-level viticulture dictated by peasant common sense, rigor and listening to the terroirs.
Its few lines testify to the philosophy adopted by the domain: “The 6 hectares of the domain, Thibaud knows them by heart. Day after day, he tames each plot and establishes a dialogue with his vines. He accompanies each terroir with humility. Uncompromising in the vineyard, Thibaud raises his grapes to an irreproachable quality.
Back at the estate, they are carefully sorted and go into cold pre-fermentation maceration to preserve the delicacy of the Pinot Noir. Fermentation continues naturally, before punching down and extraction, gently. In Pommard, in the darkness and silence of the 17th century cellar, the barrels become one with the wine: at this moment, the know-how of the winemaker meets that of the cooper. Instinct as a guide, the lunar calendar as a compass and the land as a line of conduct.
