A legendary cru… Over centuries, this mythical cru has built its reputation on a single hill, and an epic history. The hermitage owes its name to the hermit, while the vineyard has existed since ancient time.
Inky purple.
Aromas of raspberry, cherry and blackberry cream, complicated by smoky bacon, incense and Asian spice Supple and sweet with palate-staining red and dark fruit flavors complemented by mocha, truffle and black olive. The red fruit builds exponentially through the mineral-drenched, sappy finish. Captivating clarity and depth, outstanding complexity and persistence.
Food Pairing:
Quail, duck breast, lamb, cured cheese, chocolate based dessert.
Vinification and Maturing:
Age of the Vines: 40-60 years. The maceration lasts 3 to 4 weeks with daily pump overs. Aged in 20% new French oak for 15 to 18 months.
