The Domaine de Thalabert has belonged to the Maison Paul Jaboulet Aine since 1834, at the very beginning of the winery history.
Vinification and Maturing:
Age of the vines: 40-60 years. Hand-picked, meticulously vinified using traditional methods. The maceration lasts 3 weeks with daily pump overs. Aged for 12 months in French oak barrels, 20% are new.
Tasting Notes:
Color: Inky colored.
Nose: Classic blackberry and currant fruit intermixed with lots of peppery herbs, damp earth and peppery, olive aromas.
Palate: Full body, excellent concentration, and ripe tannin.
Food Pairing: Quail, pigeon, duck confit and Beijing duck, Wagyu beef and spicy dishes.
