The little chapel of Saint-Christophe is situated at the top of the hillside. It was built in 1235 by the knight Gaspard de Sterimberg after he gained the permission of the “White Queen of Castille”, to establish his hermitage on this hill after being injured during the Albigensian crusade of 1224.
Tasting Notes:
Pale Gold color.
Terrific perfume of buttered citrus, honeysuckle, tangerine and flower.
Fresh, laser-focused, tight style, a medium to full-bodied, crisp, elegant Hermitage.
Food Pairing:
Prawns and crayfish, lobster, fish and poultry.
Vinification and Maturing:
Age of Vines: 35 years. Vinified traditionally in oak, stainless-steel and concrete egg-shaped tanks. Aged for 8 to 10 months with plenty of lees stirring.
