Handpicked harvest and first fermentation in stainless steel tank during 15 days then in 30%-35% new oak barrels. Maturation during 15-18 months in cellar for ageing.
Color: A bright ruby hue with luminous highlights.
Nose: Bouquet composed of violet and small red fruits (raspberry, strawberry). Tends towards spiced ripe fruits and prune, or towards truffle, underbrush and animal notes when aging.
Palate: Rich, fragrant and complex. It lines the palate with silk and lace, delicate but fleshy texture. Sweet with little trace of acidity, its tannins remain silky-smooth.
Food Pairing: Well-roasted lamb or a free range capon. Roast veal, cheeses – preferably mild: BrillatSavarin, Reblochon, Cîteaux, Vacherin, Brie de Meaux or Chaource. Soft-centred cheeses will
respond to its great aromatic complexity.
