100% Chenin Blanc from small plots planted on puddingstone sedimentary rocks, rhyolites square stones. Manual harvest, soft pressing, tank settling for 24 to 48 hours. Slow alcoholic and malolactic fermentation with indigenous yeast. Aged in used barrels for minimum of 11 months. Organic farming.
