Takashimizu Junmaidaiginjo 35 is the most representative Sake of the brewery. It is produced with natural yeast (yeast existing naturally in the brewery environment) and made with Akita Sake Komachi rice polished to 35% remaining.

The natural yeast brings out the softness and fullness while the acidity makes it mouth-watering. 35% polishing ratio gives the sake smooth texture and clear appearance. The orignial fragrance of rice is perfectly captured while the slow brewing at low temperature results in a slightly chocolate and honey-like notes in its finish.
