TAKASHIMIZU Junmaidaiginjo 35 Brewery Yeast
Takashimizu Junmaidaiginjo 35 is the most representative Sake of the brewery. It is produced with natural yeast (yeast existing naturally in the brewery environment) and made with Akita Sake Komachi rice polished to 35% remaining. The natural yeast brings out the softness and fullness while the acidity makes it mouth-watering, together the body of the Sake is tender and clear. The slow brewing at low temperature results in a Sake which captures the original fragrance of the rice and the palate finishes with subtle flavors of honey and chocolate.
