50% Pinot (referring to both Pinot Blanc and Auxerrois, as they do in Alsace), 30–35% Gewurztraminer, 10% Muscat and 5% Riesling, from 40-year-old vines.
Presentation
The Lotus Flower, symbol of wisdom and purity in Asia, is the emblem of this wine designed to highlight the harmony of Alsace grape varieties with the great cuisines of Asia and the World.
Terroir
The grapes come from plots of the Herrenweg in Turckheim. Located on the alluvial fan of the Fecht, this terroir is characterized by colluvial deposits composed of a gravelly-sandy substrate, alluvium and pebbles. Similar to the Graves soil, this terroir produces aromatic, ripe and elegant wines.
In the vineyard
Since 2004, the entire vineyard has been organically and biodynamically cultivated. This other, more demanding and qualitative path allows for a symbiosis between the sky, the earth, the plant and man. This close relationship between these 4 elements produces a noble grape, which, in turn, will give birth to a dense and balanced wine with a unique personality.
Vinification
Harvested by hand and pressed whole pneumatically (between 5 and 8 hours), the grapes – exclusively from organic and biodynamic farming – naturally release their aromas to the must. They ferment spontaneously without the addition of enzymes or selected yeasts, and without chaptalization. After a fermentation lasting from one to four months, they are aged, depending on the case, in century-old oak tuns or stainless steel vats.
Tasting
The nose is open and expressive. The palate is dense and complex with a beautiful freshness. The spice is very present in this vintage and prolongs the finish on pepper and nutmeg.
Food pairings
Appetizer, salmon mousse, spring rolls, crab, Chinese salad, dishes from Southeast Asian cuisine, Indian, Thai or Creole cuisine. Perfect for herb or wok cooking.
