Josmeyer, Riesling “Le Kottabe”, Alsace AOP
Hand-picked and whole-bunch pressed very slowly and gently in pneumatic presses over 5-8 hours. Transferred to thermo-regulated stainless steel tanks to begin a fermentation using only its own natural yeast. Maturing on fine lies from 4 to 8 months in old centenary casks.
Color: Bright straw color.
Nose: Intensely mineral aromas of lemon, apricot and white flowers.
Palate: Fresh and crisp, with a mineral spine providing support to the bright, lightly saline nectarine and citrus flavors. Finishes with lemony zip and an austere mouthfeel.
Food Pairing: Meaty and Oily Fish.
