Laurence and Rémi Dufaitre started their vineyard on 2001 in Saint-Étienne-des-Oullières, on the right bank of the Saône River. Their approach was inspired by Jules Chauvet, the winemaker, chemist and incredible taster, who wanted a return to traditional methods to make
lighter and more aromatic wines.
The Cote de Brouilly is fermented in concrete tanks using natural yeast and then transferred
into tonneau to open it up a little. Then aging in concrete tank. Unfiltered before bottling
with no Sulphur added.
Color: Ruby red
Nose: Red fruits, floral and exotic spice qualities, with a smoky mineral overtone that gains strength as the wine stretches out with air.
Palate: This is a complex, highly perfumed wine shows outstanding energy and definition on the finish, which is given shape by silky, harmonious tannins.
Food pairing: Lamb, stewed red meat or duck.
