Named as the Sanchomartin vine plot, Malleolus de Sanchomartin comes from a 1 hectare vineyard that was planted by grafting clones from the oldest vineyards. The wine produced is tannic and has a marked acidity, which makes
it ideal for ageing in oak.
Fermentation in stainless steel, maceration of around 28 days. Malolactic fermentation in French oak. Maturation of 18 months in Allier French oak barrels.
Color: Intense and deep cherry red colour.
Nose: it stands out for its intensity and the quality of its aromas. Complex and elegant, with subtle floral notes, licorice, blackberry and currant.
Palate: it is powerful and persistent with a balanced acidity and silky, sweet and structured tannins of great quality.
Food pairing: Roast lamb, grilled red meat
