Noir d’Eulalie is a blanc de noirs crafted exclusively from Pinot Noir from 3 plots located at the top of the hillside. About 40% of the wines were vinified and aged in Burgundian Demi-Muids. It is a rare Champagne, result of a strict parcel selection in our historical vineyards where the singular expression of old vines of pinot noir transcends our terroir of oyster marls.
This Champagne has a bright and pale-yellow gold color appearance with light straw reflections. It is animated by fine, vivid bubbles which forms arrays of persistent beads. The visual sensation announces a rich and fresh wine. The first nose expresses the earthly and marine origin of our terroir, evoking iodine notes and smoked limestone, relayed by violet fragrances, with some exotic pepper accents. The aeration of Champagne adds to the pleasure notes of black cover, cherry, pomelo, blackberry, with some subtle woody toasted bread accents. The first contact in the palate is rich and fresh, with a creamy and melted effervescence. This Champagne develops a luscious and full-bodied fruity profile, accentuated by an integrated acidity of pomelo and fleshy fruit. The middle of the mouth is orchestrated by a limestone minerality that confers fruity volume, iodine salinity and long aftertaste. The juicy finish relays a general harmony with a freshness of limestone and saline that resonates in the palate, the signature of our terroirs.
