Destalking followed by 14 days on the skins. Fermentation at 28⁰C. Malolactic fermentation in stainless steel.
Maturing for 14 months in barriques (50% new)

Color: Ruby red color
Nose: Aromas of dark fruit and cherry, with spice leather and tobacco
Palate: Black currant and candied violet which alternates with thyme and lavender. Silky tannins and a very long finish

Food Pairing: Red or white meat, delicate fish cooked without lemon or even with baked vegetables
