Hand-picked grapes, 100% Stainless Steel fermented grapes. Daily punch downs and pump overs. Use native yeast. Soft pneumatic pressing. Malolactic fermentation in steel tanks. Aged 15 months “on the lees” in amphoras. No sulphites added. No filtration, No fining.
Color: Beautiful dark color.
Nose: Full nose, flattering, round, expressive, black fruits and red berries, blackberry, strawberry, gooseberry, hints of white pepper.
Palate: Sweet attack, medium snug but charming mouth, tannins still tight but velvety, beautiful volume, rich, deep, delicate, chopped fruit, hints of sweet spices.
Food Pairing: Roast beef, steak, Roasted Woodcock, pigeon pastilla feathers. Rabbit stew. Cheese.
