Manual harvest in 15 kg crates. The grapes are then sorted on the table. Destemmed harvest. No oenological product used. Maceration for 30 days (cement tank). Natural fermentation and elevage in cement during 18 months. Unfiltered with 3 gr of So2 before bottling.
Color: Intense, bright red color
Nose: Rustic black fruit notes with loads of pepper, earthiness and barnyard notes
Palate: A charming aroma of smoking hay, shredded ginger, and handfuls of shrub fruit. The palate is rich with currants and dark raspberries
Food Pairing: Lamb, stewed red meat, grilled meat or duck
